Gluten Free Chocolate Chip Ice Cream Sandwiches

Yum! Gluten Free Chocolate Chip Ice Cream Sandwiches sounds soo delicious! What makes it, even more, delicious is the added coconut ice cream we are using. It may be a crazy to be talking about ice cream in February with this cold weather being outdoors but all this snow and cold is soon going to melt away.

If we close our blinds and take full advantage of the sunlight we can almost imagine that the warm weather really do exist.

My mom actually made this recipe up but I was allowed to share this for all my gluten free friends out there. My mom wanted an ice sandwich and decided to make one using gluten free cookies and gluten free ice cream. Why not! These PC gluten free chocolate chip cookies are from Superstore.


Here is how to make this:

This Luna & Larry’s Organic Coconut Bliss Naked Coconut ice cream can be found in most stores.
Turn over the cookies and put a scoop of ice cream on it and put the second cookie on top.
To make individual wrapping for the chocolate chip ice cream sandwiches my mom used plastic wrap.

Freezer Time

Place the individually wrapped chocolate chip ice cream sandwiches in a Ziploc bag or reusable bag and place in into the freezer until you are ready to indulge.
